Griddles
Griddles have a vast range of uses and come in many styles. Generally a griddle is a thick metal cooking surface, usually made from steel, cast iron or aluminium (aluminum). The plate is desgined to keep an even heat. Commercial griddles have a considerable amount of wear and the plate is up to 1 inch thick (domestic griddles are around 1/4 inch). A thicker griddle plate is better not just for durability but because of the improved eveness of the heat absorbtion.
