Convection ovens work by moving heated air at speed through the oven. One major benefit of cooking with a convection oven method is that the oven can work at lower temperatures compared with other methods of cooking and still cook in less time than conventional ovens. A second benefit is the reduction of hot spots. The reason is that the heat is distributed evenly throughout the oven.
