Types of Commercial Grill

Gridironing

Gridironing is a form of cooking where the grill is suspended above a heat source, i.e. direct radiant heat.   A barbecue is an example of the gridiron grilling method.

Grill-braising

This is a method of cooking meat or vegetables in a pot put on top of a grill. This is also known as “barbecue-braising” or “grill-braising”.  Grill-braising enables the food to be browned.

Flattop Grilling

This method uses a flat pan, known as a griddle on which the food is placed.  The griddle is very hot and often coated with butter for browning.
