Combi Ovens

Combi Ovens are a combination of different cooking technologies. The combi oven concept is a relatively recent addition to the restaurant industry, having emerged around 15 – 20 years ago.

A combi oven combines one or more of the following cooking technologies:

  • Convection cooking – convection cooks food by circulating heated air.
  • Stream cooking – this method includes heated water for cooking.
  • Microwave cooking.

A combi oven enables different cooking methods to be combined, for example using microwave and convection the food can be cooked quickly and additionally browned: both the speed and browning is not available in single method ovens.
